Vermicelli Upma

Ingredients:
Vermicelli (Semya) 1 cup
Green Chillies 3 – 5
Potato 1 Small
Carrot 1 Small
Onions 1 Small
Salt to taste
Talimpu:
Urad Dal 1/2 tsp
Cumin Seeds 1/2 tsp
Mustard Seeds 1/4 tsp
Curry Leaves 10
Oil 1 tsp
Method of preparation:
Remove stems, wash and chop the green chiles.
Peel, remove ends and finely chop onion and carrot.
Peel and finely chop potato.
Heat oil in a pan, add all talimpu ingredients in order.
When mustard seeds start spluttering, add chopped green chiles, onion, carrot and potato.
Add salt and cook covered on low flame till potato is soft.
Pour 2 cups of water into the pan and bring to a boil.
Now add vermicelli / semya and stir.
Cook covered on medium – low flame till all water is absorbed and vermicelli is cooked.
Remove onto a plate and serve semya upma.
Notes: Vermicelli can also be first boiled in water till 80 % cooked before adding to the cooked vegetables in which case avoid adding water.
