Bendi with Amaranth

Bendakaya Thotakura Kura
Ingredients:
Bendi/ Bendakayalu/ Okra 10
Thotakura/ Amaranth leaves 1/4 bunch
Oil 2 tbsps
Talimpu:
Urad dal 1 tsp
Mustard seeds 1 tsp
Broken red chillies 4
Method of preparation:
Wash and pat dry bendakayalu.
Remove ends and slice them vertically twice.
Wash and pluck some amaranth leaves/ thotakura.
Heat oil in a pan, add sliced bendi and saute for 5 minutes.
Add all talimpu ingredients and stir fry for a minute.
Now add amaranth leaves and saute for few seconds.
Finally add salt and serve with cooked white rice.
Notes: Use tender amaranth leaves if you can.
