Fenugreek Leaves Rice

methi rice Fenugreek Leaves Rice

Ingredients:

Fenugreek Leaves 1 bunch
Grated Coconut 3 tbsps
Urad dal 1 tsp
Green chillies 3
Garlic 3 pods
Oil 1 tbsp
Salt to taste

Cooked Rice 2 cups

Method of preparation:

Wash and coarsely chop fenugreek leaves.
Crush garlic pods and grind green chillies coarsely.

Heat oil in a pan, add crushed garlic pods and urad dal.
When seeds start to splutter, add fenugreek leaves and saute for a minute.
Now add coarsely ground green chillies and grated cocounut.
Fry for few seconds and mix in the cooked rice.
Serve with a squeeze of lime.

Notes: To make it less spicy, halve the chillies.
