Spicy Plantain

Aratikaya minapappu karam
Ingredients:
Plantain/ Aratikaya/ Hara kela 1
Red chillies 3
Urad dal 1 tbsp
Tamarind 1/2 inch ball
Salt to taste
Oil 1 tbsp
Talimpu:
Mustard seeds 1 tsp
Urad dal 1 tsp
Method of preparation:
Remove skin and chop raw banana/ aratikaya into 2 inch sticks.
Dip them in a bowl of water and microwave it for 6-10minutes
depending on the thickness of slices.
You can alternatively cook them in pressure cooker (1 whistle).
Plantain slices should yield when you cut into them.
Prepare tamarind extract by soaking tamarind ball in water for few minutes
and squeezing the juice of it and discarding strings if any.
Dry roast red chillies, urad dal in a pan and powder them using a blender.
Now heat oil in a pan, add the boiled kela slices and saute for a minute or two.
Add mustard seeds, urad dal and give it a quick stir.
Then add the above ground powder, tamarind extract, salt and 1/4 cup of water.
Cook until all the water is evaporated and serve with white rice and ghee.
Notes: You can store the powder in tight container and use it for months.
