Plantain with Onion

Aratikaya Ullipaya Karam
Ingredients:
Plantain 1
Green Chili 4
Onion 1
Salt to taste
Talimpu:
Urad Dal 1/2 tsp
Mustard Seeds 1/2 tsp
Cumin Seeds 1/2 tsp
Curry Leaves 4
Oil 2 tbsps
Method of preparation:
Remove ends of plantain and slice off the hard skin.
Slice the plantain into thin circles and soak them in cold water.
Remove ends, wash and roughly chop green chillies.
Remove ends, peel and roughly chop onion.
Using mortar and pestle, mash green chillies and onion with salt into some coarse paste.
Heat oil in a pan, add all talimpu ingredients in order.
When urad dal turns light brown, add plantain circles and mix well.
Add a pinch of salt, turmeric powder and cook covered for about 5 minutes.
Remove the lid and make sure the plantain is cooked and soft without breaking down.
Add the onion and green chilli mixture and stir fry until raw smell of onion is vanished.
Adjust the salt and serve hot with steamed rice.
Notes: Don’t overcook plantain.
