Arbi with Onion and Tomato

Chama Dumpala Kura
Ingredients:
Arbi/ Tari Root 4-6
Onion 1 large
Tomato 2 small
Ginger Garlic paste 1 tsp
Coriander Powder 2 tsps
Turmeric Powder a pinch
Red Chilli Powder 1 tsp
Urad Dal 1 tsp
Cumin Seeds 1 tsp
Mustard Seeds 1/2 tsp
Broken Red Chiles 5
Salt to taste
Oil 1 tbsp
Method of preparation:
Wash and pressure cook arbi in 6-8 cups of water for 3 whistles.
Cool them down and peel the skin off.
Chop them into somewhat large pieces.
Peel and chop onion roughly.
Wash and chop tomato into small cubes.
Heat oil in a pan, add urad dal, mustard seeds, cumin seeds and broken red chiles.
Then add chopped onion and stir fry until onion turns translucent.
Then add corainder powder and ginger garlic paste.
Briefly fry and add chopped tomato and cook until tomatoes turn soft.
Add the arbi cubes, turmeric powder, red chilli powder and salt.
Mix thoroughly and stir fry for 1-2 minutes.
Serve with hot rice.
Notes: Squeeze a lemon or garnish with cilantro at end for fresh taste.
