Bitter Gourd with Potato

Kakarakaya Bangala Dumpa Kura
Ingredients:
Bitter Gourd / Bitter Melon 2
Potato 1
Green Chiles 2
Turmeric Powder a pinch
Salt as required
Talimpu:
Urad Dal 1 tsp
Cumin Seeds 1 tsp
Mustard Seeds 1/2 tsp
Oil 1 tbsp
Method of preparation:
Wash, remove ends and chop bittergourd into thin circles.
Sprinkle good amount of salt and leave for about 45 minutes.
Wash the salted bittergourd under water thoroughly.
Give them a good squeeze and keep aside.
Peel, wash and chop potato into thin slices.
Remove ends, wash and slice the green chiles.
Heat oil in a pan, add all talimpu ingredients in order.
When mustard seeds stop spluttering, add sliced green chiles, sliced potato, sliced bittergourd, turmeric powder and little salt.
Cook covered stirring occasionally until bitter gourd and potato are cooked thoroughly.
Uncover and stir fry for few seconds.
Remove from heat and serve with hot rice.
Notes: You can also add sliced onion along with other ingredients.
