Arbi Fry with Cilantro


Chama Dumpa Kotthimera Vepudu

Ingredients:

Taro Root/ Arvi 3 - 5
Cilantro 1/2 a bunch
Green Chiles 2 - 3
Garlic 3 pods
Turmeric Powder a pinch
Oil 2 tbsps
Salt to taste

Method of preparation:

Pressure cook arvi with 4 - 8 cups of water for 2-3 whistles.
Once cooked, peel and roughly chop arvi into big chunks.
Clean, wash and mince cilantro.
Peel and crush the garlic.
Remove stems, wash and finely chop green chiles.

Heat oil in a non stick pan, add cooked arbi and stir fry until its little crisp on outside.
Then add garlic, green chiles, turmeric powder and salt.
Stir fry until for a minute or two and add minced cilantro.
Mix thoroughly and fry for a minute and keep covered until needed.
Serve hot with steamed white rice.

Notes: Make sure taro root doesn’t become too mushy in which case it needs more oil.
