Strawberry Phirni
Phirni is a Kashmiri milk based sweet pudding generally containing ground rice paste. Milk is thickened a bit and rice paste is cooked along with it to obtain a thick custard sweet. various fruits and nuts are added as flavoring during the process. This is simple version of phirni using rice flour and chopped stawberries.
Makes: 1 – 2 servings
Ingredients:
Fresh Strawberries 5 – 8
Whole / Skimmed Milk 1 cup
Rice Flour 1 tbsp
Sugar 2 tbsps or to taste
Pistachios 6
Method of preparation:
Wash and hull the strawberries.
Thinly slice one of the strawberry and finely chop others.
Soak pistachios in warm water for few minutes.
Peel off the skin and thinly slice soaked pistachios.
Mix rice flour in quarter cup of water into smooth paste without any lumps.
Bring to boil milk in heavy bottomed vessel.
Gradually mix in rice flour paste and boil on low flame till the milk thickens.
Stir in sugar and let it completely melt.
Remove from heat, cool to room temperature and stir in chopped strawberries.
Serve strawberry phirni chilled and garnish with sliced pistachios and sliced strawberry.
Notes: Instead of using rice flour, soak rice in water for half an hour and grind it into fine paste.
Suggestions: If phirni tastes raw, make sure to cook rice flour or ground rice thoroughly before removing from heat.
Variations: Various fruits and nuts can be used as a main flavoring substance. Badam Phirni (adding almond paste to the milk), Kathal Phirni (chopped jack fruit in milk), Peach Phirni, Kesar Pista Phirni, Mango Phirni, etc… Use jaggery or honey instead of sugar.
Other Names: Strawberry Phirnee.
