Whole Wheat Grains Salad

Whole Wheat Grain Salad is a very healthy and simple salad made with whole wheat grains. Whole wheat is soaked in water overnight and cooked in enough water till soft. Lemon vinaigrette is prepared and mixed with finely choppped cilantro and black pepper powder to taste. Cooked whole wheat grains are tossed in lemon vinaigrette just before serving.
Makes: around 1 1/2 Cups of Whole Wheat Grains Salad.
Ingredients:
Whole Wheat Grains 1 Cup
Onion 1 Small
Lemon Juice 1 tsp
Cilantro few sprigs
Black Pepper Powder to taste
Salt to taste
Oil 1 tbsp
Method of preparation:
Soak whole wheat in enough water and leave it overnight or for around 6 – 8 hours.
Wash the soaked whole wheat under running water to refresh.
Bring to boil 1 1/2 – 2 cups of water in a sauce pot, add soaked whole wheat.
Boil till whole wheat is cooked and just soft without getting mushy (around 40 minutes).
Strain the cooked whole wheat and cool to room temperature.
Peel and very finely chop the onion.
Clean, wash and finely chop the cilantro.
In a mixing bowl, whisk together oil, lemon juice, salt and balck pepper powder.
Then stir in finely chopped onion and cilantro.
Finally toss in the cooked whole wheat and serve.
Notes:Make sure not to overcook the whole wheat grains.
Suggestions: If the whole wheat leaves a raw bite once removed from heat, put it back on heat and cook till soft.
Variations: Add finely chopped scallions, green bell pepper, cucumber etc. Use a different vinaigrette to taste.
