Chikkudu Kaya Nuvvula Podem

Ingredients:

Fresh flat green beans 15-20
Sesame Seeds 2 tbsps
Broken Red Chiles 3 – 5
Cumin Seeds 1/2 tsp
Salt to taste

Talimpu:

Urad dal 1 tsp
Mustard seeds 1/2 tsp
Cumin seeds 1/2 tsp
Broken red chillies 3
Curry Leaves 3
Hing a big pinch
Oil 1 tbsp

Method of preparation:

Grind sesame seeds, broken red chiles, cumin seeds and salt into somewhat fine powder.
Wash, snap the ends and chop beans into inch sized pieces.

Boil few cups of water in a saucepan.
Add chopped beans, little salt and cook for app. 5 minutes or until the beans become tender without losing the shape.
Remove from heat and strain the cooked beans.

Heat oil in small wok on medium high, add all talimpu ingredients in order.
When mustard seeds start to jump, add cooked beans and stir fry for a minute or two.
Add the ground sesame powder and salt if necessary.
Toss well and serve with rice or roti.

Notes: Don’t overcook beans.

Ingredients:

Cluster Beans 2 handfuls
Milk 1/2 cup
Onion 1
Green Chiles 2
Salt to taste

Talimpu:

Urad dal 1/2 tsp
Cumin seeds 1/2 tsp
Mustard seeds 1/2 tsp
Asafoetida a pinch
Curry Leaves 3
Oil 1 tsp

Method of preparation:

Wash, remove ends and chop cluster beans into 1 inch pieces.
Remove stems, wash and finely chop green chiles.
Peel and finely chop the onion.

Heat oil in a pan, add all talimpu ingredients in order.
When dal changes color, add green chiles and onion.
Once onion turns little translucent, add chopped cluster beans, milk and salt.
Cook covered on low flame until all the milk is evaporated or until cluster beans are cooked through.
Stir fry for few seconds to evaporate any excess milk.
Serve with steamed rice.

Notes: Make sure cluster beans are properly cooked.
